A livello biochimico, la carnitina facilita l’ingresso degli aci­di grassi a lunga catena all’interno dei mitocondri, dove vengono ossidati per produrre energia. Dal punto di vista cellulare, la carnitina è coinvolta in un complesso meccanismo chiamato “carnitina acil-CoA transferasi”: mantiene equilibrato il rapporto AcetilCoA\/CoA all’interno delle cellule e assiste la conversione del piruvato e del lattato ad Ace­tilCoA.
